I have an Aunty (Aunty S.T.) who is unfortunately no longer with us. Although I have not spent much time with her, she is well-known for her exquisite cooking skills.
Today, I am sharing a special (Asian) family recipe from her. In her recipe book, she has rated this recipe as ‘Excellent’ and I agree! Reading her recipe reminds me of her - simple and concise.
Ingredients
500g beef (topside, blade, silverside, sirloin etc)
5 tomatoes
2 big onions
2 tablespoon light soy sauce*
2 tablespoon dark soy sauce*
4 tablespoon tomato sauce*
2 tablespoon of white vinegar (or other varieties)
½ teaspoon salt
1 tablespoon sugar
1 tablespoon cornflour
Oil as required
Method
Cut beef into thin strips. Dust with cornflour.
Slice the onions.
Halve tomatoes, then slice thinly.
Heat oil in wok. Add onions and fry till slightly brown. Add tomatoes and fry until tomatoes break down completely. Remove and leave in plate.
Heat 1-2 tablespoon of oil in wok. Add beef and fry till it’s half cooked. Add the tomatoes-onion mixture.
Then, add all the other ingredients.
Thicken with cornflour.
Serve with a bowl of multigrain-jasmine rice and a side of cooked vegetables!
*To make it healthier: choose low-sodium soy sauce and reduced-sugar tomato sauce options.
